Pizza night on the BBQ! Pepperoni, Mushroom, Green Pepper. I heat up a pizza stone on the grill for about a half hour, then quickly assemble the pizza on top and cook at 500°F for about 12 minutes.

Went with what is usually a spring early summer dish last night. Linguini with Asparagus and Shrimp in a creamy sauce. Always tasty, but the imported asparagus is not quite the same as local in-season.

Save your shells, make shellfish stock. I'll use that to make shrimp or lobster bisque at some point.

Seafood Fettuccine with shrimp, scallops and lobster. Squid-ink pasta in an olive oil, white wine garlic sauce. Added a little butter and Parmesan Reggiano to the sauce before tossing with the pasta.

Here's a really cool dish I made recently. Thai Shrimp and Spinach Curry. Takes just over a half hour to make but it's one of those meals that feels like it took hours. Got this from my tried and true 'Gourmet Today' cookbook and adopted from a Faye Levy recipe.

A few weeks back, I saw Duane Betts in Charlotte, NC open for Little Feat. Really enjoyed the show, along with his music he sprinkled in some Allman Brothers. I saw the Allman Brothers a few times back in the 90's which featured his father Dickey Betts on guitar. Cool to see both so long apart.

From my hometown in Cambridge, Ontario this morning. At the beginning of summer a group of people formed an 'island' with rocks in the middle of the Grand River that runs through downtown. They placed a lawnchair and a Canadian flag on it and it has remained undisturbed ever since. #cbridge

Up until now, one of my biggest regrets in my younger concert going years was missing out on Bruce Springsteen. I finally corrected that last Wednesday. It was everything I expected, three insane hours.

Went Cajun this past Sunday with one of favourites. Chicken, Andouille Sausage and Shrimp Gumbo. It all starts with a good Roux.

Chicken Marsala is a dish I really enjoy making. Usually make this in the colder months but a rainy day took me brought me inside to whip this up.

Visited Cowbell Brewing in Blyth, ON. Highly recommend, I've enjoyed their products at LCBO over the last few years. Quality restaurant, I enjoyed the shaved rib-eye sandwich along with a flight sampler. Pizzas were tasty as well, they have a 'Big Mack' pizza which we really enjoyed.

Great day for BBQ! Smoked a rack of beef ribs on my Weber Smokey Mountain. Just over a 6 hour cook, used Fogo lump charcoal and some mesquite wood chunks. Gave it a one hour foil wrap toward the end before finishing unwrapped in the smoker before serving.

Haven't made this in years. Beef Tenderloin with a creamy mushroom bourbon sauce. Putting an effort lately towards revisiting some old classics that have fallen off my radar.

Did some Tennessee BBQ yesterday on my Weber Kettle grill. Butterflied a 3 lb pork loin and covered the inside with whiskey, brown sugar and Dijon mustard. I then layed some bacon slices around the roast before tieing it up with string. Basted with those same ingredients plus butter during the cook.

Began with a midnight smoke and sixteen and a half hours later, dinner is finally served. What a fun night/day, the result is worth the effort, brisket at its finest.

A fine night for a midnight smoke barbeque on my Weber Smokey Mountain. A 12 pound brisket cooking low and slow using Fogo hardwood lump and some mesquitte. I figure 14 hours before letting it rest in a dry cooler.

Cornell Chicken is my favourite method of grilling chicken, crispy skin and juicy meat. Starts with combining an egg, vegetable oil, cider vinegar some poultry seasoning, salt and pepper. While it cooks on the barbeque you baste it every 10 minutes or so until a golden colour. Delicious every time.
