Hello! I live in Guanajuato, México. I am retired. I now have time to write, cook vegan food, do Tai Chi, consult the I Ching, lead online meditation groups, play the ukulele, study Spanish, and walk the city with my adopted street dog, Charlie.

Tofu is hard to find in Guanajuato, Mexico, and expensive when available. So I started making my own. At first, I was dismayed at the amount of waste, but then I discovered that the "waste" is Okara, which makes fantastic vegan burgers. Now I like the "waste" more than the tofu! #veganfood

Huitlocoche is a fungus that parasitizes corn. Here in México, it is considered a vegan delicacy, and people seek it out. In the United States, it is called corn smut and is considered a pest. Farmers there spend millions of dollars trying to eradicate it. Who is more sane? #veganfood

My setup for converting my oven into a part-time incubator for making homemade tempeh. The temperature sensor and lightbulb go into the oven. The thermo-regulator plugs into the wall, and the light bulb plugs into the TR. #veganfood

This is the backbone of vegan cooking in México, where I live. Corn (usually in the form of tortillas), beans, and dried peppers. Throw in whatever vegetables are on sale, and you can make a great meal for less than 25 US cents. #veganfood

In the USA, corn smut causes ugly black welts on corn that make it unsaleable. Farmers spend millions to eradicate it. Here in México, those welts are called Huitlacoche and are considered a delicacy. Farmers love them because they double the value of their corn crop. Perception is everything.

I made a major expedition to the nursery in the next town. I spend $400 (that's pesos, not dollars) on plants. Then I had to visit the flower pot factory (fábrica de macetas), where I spent an equal amount on flower pots. I love seeing the piles of flower pots waiting for new homes.
