Hello! I live in Guanajuato, México. I am retired. I now have time to write, cook vegan food, do Tai Chi, consult the I Ching, lead online meditation groups, play the ukulele, study Spanish, and walk the city with my adopted street dog, Charlie.
For any of my Guanajuato friends, my new consolidated calendar for events in Guanajuato is now available.

A reminder of why we are on BlueSky. Whenever anyone views a FB ad, Mark Zuckerberg adds to his net worth of 211 billion dollars. He donated 1 million dollars to Trump's inauguration. And two weeks ago, he ended all of Facebook's Diversity, Equity, and Inclusion programs. We vote with our feet.

I need to return to the USA to deal with some bank issues. It makes me nervous to be in a country where violence is condoned and even celebrated at the highest levels of government. I won't feel totally safe until I'm back in México.

In México, gas is delivered in 30 liter tanks. You discover you are out of gas when your stove doesn't light. That just happened to me. Tomorrow morning, I'll listen especially carefully to the man yelling, "gasssssss" outside my window, and I'll run out and exchange my empty tank for a full one.

If we have any friends of George Warriner here, just a reminder, his memorial will be in meditationchapel.org in the Mary of Magdala Chapel on Wednesday (1/22/25) at 9:00 Central Time. The service will include time to share memories.

My CouchSurfer from China was worried about leaving me without any hot sauce. So on her last day here she made me a fifty lifetime supply. #veganfood

Tofu is hard to find in Guanajuato, Mexico, and expensive when available. So I started making my own. At first, I was dismayed at the amount of waste, but then I discovered that the "waste" is Okara, which makes fantastic vegan burgers. Now I like the "waste" more than the tofu! #veganfood

Guanajuato put up a carousel for Christmas. I'm not sure this guy wanted to be part of it.

Taking the day's yield of tempeh out of the incubator. I started with 800 grams of dry soybeans. I ended with 1500 grams of tempeh 56 hours later. #veganfood

One of my favorite plazas in Guanajuato México, Plaza Baratillo. Nothing fancy, just a quiet place to sit and eat a gordita and people watch.

Chef Lucy (vegan and GF) of Guanajuato México serving me Chiles en nogada. Roasted poblano peppers stuffed with fruit and nuts, then covered with her cashew cream and decorated with pomegranate seeds. They end up green, white, and red, the colors of the Mexican flag. #veganfood

People in my neighborhood in Guanajuato, México, line up early for their morning tortillas, hot off the presses. I didn't have to. I already had mine. #veganfood

Huitlocoche is a fungus that parasitizes corn. Here in México, it is considered a vegan delicacy, and people seek it out. In the United States, it is called corn smut and is considered a pest. Farmers there spend millions of dollars trying to eradicate it. Who is more sane? #veganfood

I just made some wonderful vegan mayonnaise, better than anything from the store. I used the recipe from jessicainthekitchen.com/vegan-mayonn... but I used olive oil and apple cider vinegar. #veganfood

My setup for converting my oven into a part-time incubator for making homemade tempeh. The temperature sensor and lightbulb go into the oven. The thermo-regulator plugs into the wall, and the light bulb plugs into the TR. #veganfood

If I had any confidence in Trump's justice department being fair and unbiased, I would strongly object to Biden pardoning his son. But I don't, so I won't.

This is the backbone of vegan cooking in México, where I live. Corn (usually in the form of tortillas), beans, and dried peppers. Throw in whatever vegetables are on sale, and you can make a great meal for less than 25 US cents. #veganfood
