Ha! It was very much a random choice of how much I used, guided by laziness. I scooped out some lard, weighed it, and that's how much butter I left out.

I use a less-flaky pâte brisée dough to try and contain all the custard, but in both cases I understand the lard to help the texture (whether flaky or sturdy) while sacrificing flavor. Too much lard or shortening and it starts to taste blah and gets a slimy mouthfeel.

That looks fantastic! Did you use all butter or was there any lard in the crust? (This year I went with maybe 5:1 butter:lard and the texture/flavor balance was still pretty good.)

Mine are garlic, but probably works the same for onions? They redirect their energy back into the root if there's no scape.

My personal favorite hot sauce is Pico Pica; very little vinegar in the flavor. Not sure if you can get it where you are (I mail order mine from MexGrocer.com) but might be worth a try for some inspiration.
