The second is mixed with 'pure' colors not containing white to make them look brighter.
As you can see, it turned out much darker and you also see the difference on the paper.
Ofc this doesn't really replace a pure black, but it's a good mixing practice

As you can see here, I've received a mid tone grey left and it probably won't get darker because it is mixed with colors containing white pigments!
While white pigments can make a color pretty bright, it affects how it mixes with other colors. #watercolor ⬇️
