It takes a minute to heat up. The first three episodes are a coherent story arc on their own that set up for the increasingly better story arcs after. Stick with it—the payoff is SO worth it.

Yeah I hated Kvoth but stayed for the magic system and the worldbuilding. The Wise Man's Fear is better because you get more of the latter.
