I am obsessed with #beansalads now. Like...what. I made a Mexican inspired batch Mon eve, and just portioned out 2 cups of it for breakfast/lunch at work. I added chicken to it yesterday - pictured - and tuna/shredded green leaf today. Why didn't I know it would be this good?

Western omelet style #eggbites were made for breakfast for me & bf. Main base are eggs & cottage cheese (and salt/pepper). Pan of water at the bottom of oven to mimic sous vide. Chop veggies and meat into small bits. Top with shredded cheese right after pulling tins out. 1 batch = 24 bites.
