11. We need to get real about food. We need to address the huge vulnerabilities of the current system, without replacing it with one which cannot feed us and would trash the planet even faster. We need to stop turning our eyes away from the realities on which we depend.

Making the almond ricotta is easy and uses very few ingredients.
Boil your almonds for five minutes until they're slightly softened. Drain and rinse several times.
Then pop the nuts out of their skins and blend until smooth with salt, lemon juice and a light mellow flavoured olive oil.
