Intense winter tomatoes, grown on the coast in the south of Spain, so rich & salty (you can taste the proximity to the sea) they barely need seasoning! Keeping it simple, letting them shine with olive oil & wild garlic.

This meal was a labour of love. It's something for a special occasion; the mushrooms aren't cheap and the potatoes take a day to prepare. So worth it!
