I made a test batch of this apple, maple, habanero hot sauce with cinnamon, ginger and coriander and it’s really good. I’ll probably add more habaneros next time for more heat.

Bake in a 550F oven for 10-15 minutes or until it’s done to your liking. A couple before and after pics for reference.

Last (probably not) hot sauce ferments of the year first picture is day 1 and the second is day 4 and you can see the lactobacillus bacteria working and making everything lighter in color.

These have a ways to go before I actually make sauce out of them.

And yeah I need to clean that wall off 😭

Tried a new (old) biscuit recipe this morning. This one is from Lena Richard’s New Orleans Cookbook which was released in the 1930s.

Uses all shortening and it came out a little more pale than my usual all butter biscuits. Still pretty good but I think I’ll add some sugar next time.

I just blended this hot sauce ferment that had ghost peppers, Carolina reaper, scotch Brain, and Thor’s thunderbolt peppers and I had to put on a mask because it kept making me cough 😂

Fermented some okra that I grew in the garden. First picture is the start and 2 weeks later we’re done. Came out pretty good! 🌱

Made a maple bourbon pound cake. I had taken it to a party but by the time I got there everyone was in drinking mode so it wasn’t touched and the host just told me to take it back.

Cut a slice today and it’s pretty damn good.

Had just enough okra from the garden to make a quart to ferment. In a week or two I’ll have pickled okra to snack on.

I planted Gold Coast and Jambalaya 2.0 varieties. The Gold Coast started producing earlier with bigger pods but the Jambalaya has caught up. Might look into other seeds next year 🌱

Adding the Chippola’s Pride tomato to my grow again next year list. Big sauce tomatoes and smell like a lightly cooked sauce when you slice them open and not a lot of seeds. Good disease resistance as well. 🌱

Tendril was dry, field spot looks ok and it had a hollow knock. It hasn’t grown in size in a week so I assume it’s just going to be a small one. I pulled it and I’ll see how it is later. Also the jambalaya okra is coming in. 🌱
