I had to sit and think about this question for a solid twelve hours, but honestly that's about normal amounts of thinking about knights for me.
First off, Howard Pyle's Arthurian knights. Pyle did massive amounts of work for defining the modern aesthetic of knights (also pirates and Robin Hood).

Frankly incredible that you can tell that medieval art is a forgery made by one specific incredibly prolific guy just by the extent to which he was a breast man.
