The jobs posted are definitely sparse, but I could have applied to probably about 40/50 at this point if I had actually been able to apply to the ones that offered remote working

Oh absolutely. Just in my experience as a disabled person, the options are even more abysmal. I have applied to one job in the past year (it was the only one that didn't specify it required work in-office), and i got an interview, and it turns out they expected full time work in-office
