Steam only removed pedo/rape/incest stuff. Haven't seen a comprehensive list though, so maybe there is more they removed.
I think the payment processors just don't want to be associated with that kind of extreme adult content, regardless of it's legality.

I tend to think of early access as launched anyway. Even more so with F2P games.
So I don't really think of splitgate 2 as unlaunching. You can still play it. It has 3 seasons on course already.
