trim excess fat, rub of your choice start low and slow and a good meat thermometer is always helpful. I like to wrap them in butcher paper and stick them in a cooler. I usually under cook them in the smoker because I reheat them for meals.

most of my trip was dry and nice riding conditions, except for that one ride over the mountain pass when it decided to rain and get really foggy at the top. slow and steady gets you home
