While I have yet another loaf of sourdough proofing in the fridge, I decided to do something with all of my discard! I keep a small starter so I generate very little discard. It’s been piling up for a while!

This might very well be the most delicious loaf of gluten-free sourdough I have ever made. It’s hearty and nutty and makes absolutely amazing toast.

It’s primary flours are teff, oat, and sorghum 😋

One of the best decisions I’ve made in the past year was stocking my pantry with gluten-free baking essentials and learning how to make my own bread and other baked goods like crackers.

Because buying that stuff is not cheap!

Doughly Parton keeps messing up my plans to have loaves getting long cold proofs!

Another loaf where nothing went to plan! And even though it’s over-proofed, the crumb is not at all gummy or compressed, so I’m happy.

She’s a little over proofed, but not ridiculously so. This one is really tasty and had some interesting techniques in the recipe (a stiff sweet starter and pan toasting the oats and seed in butter and maple syrup).
