I haven’t baked in a minute due to mental health. I’ve been struggling, but baking has been an outlet for me. In today’s whirlwind, we all deserve to have things that bring us joy. I made a key lime pie with candied lime peel. It brought me some much needed joy. You deserve joy too.

1st Great British Bake Off Technical Challenge of the year (#29) Hazelnut Dacquoise. A dacquiose is a meringue cake mixed with hazelnuts. It’s filled with a Nutella pastry cream and topped with chocolate ganache and hazelnut praline.

I made “Eat The Rich” Millionaire’s Shortbread Candy Bars! I developed this recipe myself! I made shortbread with crystallized ginger, a gochujang caramel, and a gochugaru infused chocolate. I also dusted them in edible glitter!
