Made today: tostadas w/ crema, guac, red cabbage, chicken tinga, onions w/ lime & cilantro, & queso fresco + cilantro lime rice & stewed black beans. Then, flautas with cheese & tinga, topped w/ crema, Valentina, queso fresco, lettuce, & pico + refried beans & Mexican rice topped w/ queso quesadilla

Riffing off a recent J. Kenji Lopez-Alt video, chili crisp fried eggs with toast, topped with a homemade matcha cream spread (think Nutella, but matcha and 80% less sugar). A delicious blend of savory, sweet, spicy, and herbaceous, with tons of textual variety, all under 500cal.
