There's absolutely existing merch of her out there! I think the developers could probably wiggle their way out of that lawsuit considering they created her, but they've long gone the way of Sierra.

It's a bit of a reverse isekai situation, where after arriving in our world she slowly started to acclimate to early 90s culture and lost her more aggressive attitude, becoming more carefree and openly ditzy, as well as more clumsy due to our human-sized civilization.

Yeah, even the novelizations of the movies before 2014 aren't Canon, though many added elements from ones like Revenge of the Sith have been reincorporated, so maybe Ahsoka's dietary details will too eventually. :P
