Made some vegan tiramisu today. Silken tofu, sugar and coconut cream for the creamy part and digestive cookies dipped in coffee with cocoa powder on top. Tasted really good, next time I’ll try some rum as well, and maybe I’ll bake vegan ladyfingers for a more authentic version. #veganfood #cooking

I attended a vegan baking class yesterday. My teams efforts (panna cotta and fudge filled chocolate pralines) not pictured! The bagels and beetroot hummus sandwich cake at the front were delicious!

Tonights dinner is vegan beyond mince wraps. Onions, beyond mince, chili, taco spice mix, lettuce, brown rice, cubed tomatoes and some salsa, guacamole and vegan jalapeno lime mayo. Really flavorful and filling!

Todays catch, not much but maybe enough for a mushroom bread :). I also caught few handfuls of lingonberries and bog bilberries.
A pine bolete (boletus pinophilus), likely. Nice size and these are really delicious and easy to prepare.

I finally got to trying tempeh for the first time and took a recipe from the side of the box, behold tempeh rice bowl! Rice, teriyaki tempeh and cabbage-carrot mix with fresh parsley. Really fast and good! #veganfood #cooking

Emptying the cabinets and trying new stuff. Lentil-tomato-pasta stew! Green lentils and tomatoes with lots of other stuff. Added some chili flakes and nutritional yeast for flavor. Small broccoli for greens. Original recipe at:

Smaller ones are silken tofu pudding with cocoa and protein powder and a bit of oat milk. Nice 25g and 10g of protein per jar! #veganfood #cooking #breakfast

Trying some new stuff, mix of easier and longer prep stuff. First fries with a bit of garlic and olive oil, then a Lidl vegan paprika ”steak” which wasn’t great. Peperonata saved the day. I made it from scratch from a new recipe and will definitely cook it again!

Gomphidius glutinosus, limanuljaska in finnish, something like slimeball translated. It’s a bit of a chore to clean up the slime but it’s a good edible mushroom after, goes well in sauces. Easy to recognize with the slime and yellow base of the stem and the long sparse gills. #mushroom #fungifriends

Didn’t cook much in July due to scorchio. It cooled down a little and I’m back at it and today I made some cabbage casserole. Vegan döner, cabbage, crushed tomatoes, garlic, shallots and pudding rice. Slow to cook but really tasty! #veganfood #cooking

Been a crazy few weeks at work, so haven’t posted much, but I made some ok curry today. Massaman curry paste, coconut milk, green beans, tofu and bamboo shoots. Some rice in the bottom of the plate. #veganfood #cooking

Asparagus season is on and I found some nice domestic asparagus from the store! So todays dinner is asparagus risotto. Shallots, garlic, white wine, some vegan butter and nutritional yeast, salt and black pepper for taste. #veganfood #cooking
