TL;DR on GitOps: it's basically allows you to have a git-repository act as a single source of truth for a kubernetes environment, which IMO is like the only way to make kubernetes make sense (As documenting a kubernetes setup SUCKS otherwise)

part of the reason is that I felt a little too dependent on my AMD barebone PC that acts as my primary server, this setup makes it very easy to just setup multiple nodes
