Making Mexican Hot Chocolate cookies from a NYTimes recipe. It involves freezing mini marshmallows and stuffing them in cookie dough. I think it worked but I sometimes feel like the only marshmallow cookie form I understand is rice krispie treats.

I'm not going to be able to go abroad this year for a long walk but I live in a great place for such a thing. I'm thinking the Oregon Coast Trail as a goal. Anyone here done the whole thing?

I spent the full moon (the Howling Moon) out at a hot springs in far out Eastern Oregon where I got to watch the moon rise with planets soaking in hot water with coyotes howling.

I know Eastern Oregon gets a bad rap from some but I can't stay away. It will always be a part of me, my first home.

Triple cranberry cookie dough - freeze dried cranberries pulverized to powder are added to white chocolate and the dough. I started experimenting with this recipe idea in April - ready to see if browned butter increases the deliciousness of this gluten free cookie.
