I recently had a similar experience, but with my wheat starters. For me, the solution was to use only a very small amount (1/8 Teaspoon/ 1/2 Cup Flour)of the old starter to refresh it, in the hope that a healthy balance would be restored. And so far, it seems to be working (knock on wood).
