Today I made a delicious Cheese Soufflé. I got a decent rise on it and was shocked at how fast it fell after it came out of the oven. For my first soufflé, both making and eating, I think I did pretty good!

Life and family got in the way of progressing through the book. Not that I tried too hard to fight against it. I had to wait for the soufflé mold, plus soufflés are intimidating!

It was worth trying once! Although this recipe makes me a bit nervous for some recipes later in the book.

Coming out of the oven, the smell was salmon mixed with cheese. I definitely needed the glass of wine to work up my courage to taste it. Taste: 4/10

So, it's not terrible. I wouldn't make it again unless someone desperately wants to taste it. I definitely taste the salmon. The problem is that the salmon has that texture of overcooked fish, which is off-putting.

I was pleasantly surprised at the crispiness when I checked on it! I will say the crispy cheese on top was my favorite part 😊
