This is from my BBQ, smoking a brisket on Friday night.
Red - set pit temp
Orange - brisket flat
Green - brisket point
The "stall" is so well shown here, as the rate of temp climbing slows to zero in the flat (circled). Then the entire brisket is wrapped and put back in /1

It took me a very long minute to wrap my head around this chart from one of my favourite economists @grogsgamut.bsky.social. I wish, in health academia, we had the freedom to circulate something with arbitrary trend lines like this for the sake of broad 1/
