How good are graphs!

This is from my BBQ, smoking a brisket on Friday night.
Red - set pit temp
Orange - brisket flat
Green - brisket point

The "stall" is so well shown here, as the rate of temp climbing slows to zero in the flat (circled). Then the entire brisket is wrapped and put back in /1
