Dammit! Now you're making me learn stuff! Short answer, they kept cooking it longer than the usual homemade, releasing more pectin from the cranberries and evaporating more water, leading to the gel-like consistency. In homemade, the liquid has been absorbed by the bread I showed you.

To me, it would be reasonable to spread jam on bread. With cranberry sauce, the liquid would soak in, making the bread a bit mushy and leaving the uncrushed berries to sit on top.
I don't know why I'm arguing this. I don't even like the stuff. I guess I'm feeling ornery.
