So I think I nailed the cookie thickness and spice blend. I upped the cardamom and did half white, half black pepper. It has a nice warm heat towards the backend of the pallet. The icing still needs work. Will revisit tomorrow.

Okay notes about the stamped gingerbread:
-I personally think it’s too spicy, maybe halve the white pepper and cut with black, or maybe sub all black.
-maybe more cardamom?
-thinner glaze
-thicker base
I’ll be testing a second batch later.
