I like to decorate early so we can have the lights up for most of winter. The days are short here now and weather is awful, so this brings a bit of cheer.

You can make the curry as thick or runny as you like by adding less or more water at the start. I prefer it at this consistency, almost like a thick soup.

Add coconut powder, or coconut cream, but I prefer the powder as it’s 100% coconut. Stir through cashew cream. Stir a few minutes until it almost simmers and done! Serve with rice or naan.

Sauté onion with a bit of ginger, garlic and fresh bay leaves, add chunks of pumpkin and your favourite turmeric-based curry spice and salt. Add water, simmer, blitz partially with a immersion blender before adding the chickpeas. Simmer a few minutes longer.

Those are very special cows! They are a breed called Lakenvelder! From this part of the world, mainly Netherlands and Germany, but possibly already extinct in Germany, some reportedly also living in Belgium. In 1918 there were only 200 left. There is also a herd living near Almere.
