You can make the curry as thick or runny as you like by adding less or more water at the start. I prefer it at this consistency, almost like a thick soup.

Add coconut powder, or coconut cream, but I prefer the powder as it’s 100% coconut. Stir through cashew cream. Stir a few minutes until it almost simmers and done! Serve with rice or naan.

Sauté onion with a bit of ginger, garlic and fresh bay leaves, add chunks of pumpkin and your favourite turmeric-based curry spice and salt. Add water, simmer, blitz partially with a immersion blender before adding the chickpeas. Simmer a few minutes longer.

We were prepared for St. Martin tonight! Kids go knocking on doors with hand-made lanterns singing little songs and are given sweets. Raymond was home to keep opening the front door as I was still at work. His reward are the leftovers!

Raymond and I took a rare trip to the cinema today and saw ‘The Golden Spurtle’! A documentary set in a small village of the Scottish highlands featuring the world championship of porridge making. 5 stars!
