I used onion powder instead of fresh/cooked onions, which probably helps prolong its shelf life, but real bread generally doesn’t keep well beyond a few days. Mine rarely gets mouldy (I always add olive or avocado oil) but it does dry, so it’s OK for toast.

It could be too dry, most doughs, esp. pizza need a very wet mix, which isn’t easy to manipulate. Otherwise, try manually spreading on your pizza tray, gently with your fingertips instead of a rolling pin.

Good reason for Dungeness being bleak 😉. I grew up and lived my first 54 years in Ramsgate, Margate and Broadstairs. John learned to fly at Lydd, very close to Dungeness. Know the area very well.
