Hope everyone is doing good on this Saturday. I'll be smoking these bone in chicken thighs at 225°-250° for about 2.5 hours. An easy set it and forget it smoke. Cheers Y'all! 🍻 🍜

Chicken Parm My Way! I ripped the chicken in a hot cast iron till I got a good sear on one side, then flipped it and straight into a 400° oven for about 8 minutes then sauced and cheesed it. Cranked the heat to 475° for another 5 minutes, perfectly cooked!! Served it with some mixed veggies 🍻 🍜

Late dinner, but the Beef Stew is ready. Who's hungry?? Typical beef stew with mirepoix and potatoes cooked in beef stock and finished with a little Demi-glace to add a little more flavor. And one piece of buttered sourdough. Hope you guys have had a great weekend. Cheers 🍻 🍜

2 Tsp Chile Piquin
1/2 Yellow Onion
3 Garlic Cloves
3 Roma Tomatoes
Juice of 1/2 Lime
Some Cilantro

I decided to smoke some chicken thighs for dinner. Easy peasy, walk away for two hours at 250° with cherry wood for my smoke then at the two hour mark flip skin side down and crank the smoker to 350° for 15 or so minutes for that crispy skin. These turned out amazing. Cheers Y'all! 🍻🍜
