I went all retro yesterday and made a delicious pineapple upside down cake!
I used a coconut yogurt in the sponge - tastes like an edible pina colada!
Oh, and it’s virtually fat free!

Weirdly, I couldn’t see the lunar eclipse with the naked eye, but my phone camera did - absolutely dire photos, but the little vid beforehand shows our gorgeous countryside! However, you’ll have to trust me on that - can’t upload it to Bluesky! Have a pic of the moonset this morning instead!
