Modern cars have had dozens of ECUs built in for many years.
Every time it's given a service, the garage will plug it into a laptop, download and install the latest updates. This is not new technology.
Over the air updates are simply a different method of installing those updates. Nothing more.

I have a car that takes software updates over the air, and it only happens when you switch off the car and it disables the car so you can't drive it until the update is done.
It also asks if you agree to go ahead at that time with the update.
