I forgot to follow up on this earlier. Ultima Codex had some info and the original hella cool sketch from Origin Systems' in-house artist Keith Berdak.

The original sketch from 1986 of the zebra centaur was included in Ultima 6's intro in pixel portrait form. It's a very wild-looking centaur lady with a striped jacket, rope, a sheathed hunting knife, and cuffs around her waist. A colourized form from Berdak of the zebra centaur
