Wok cooking technique puts oil in the pan after it's heated up, and it'll be nice and nonstick without any particular coating. I use that for my cheap IKEA steel pans and it works a treat.

From a sound mixing perspective, you might need to enhance the bass to generate a smoother timbre (like the fidelity of a radio host's voice as opposed to the more tinny-sound basic microphones capture). I sound VERY different after being recorded by a proper sound board!
