5/20: Just a sourdough loaf after a short hiatus. I totally over-proofed it after the cold ferment (hence the shape), but the flavour is good and the crumb wasn't super dense or full of big pockets.

4/20: Sourdough dinner rolls. I've made this recipe before, but my digital theremometer made me realise my oven takes way longer than I think to get to temp, so these baked at the wrong temperature.

3/20: Roasted garlic, parmesan and basil focaccia. I covered it with foil about 20 minutes in because I was worried about burning, and it came out beautifully.

2/20: This vampiric looking walnut + olive loaf. I turned down the oven temp because it was in a loaf pan instead of a Dutch oven and I think I went too far.

My sourdough starter is named Jeremy. Last year, he spent most of his time languishing in the fridge; I've since moved him to the counter and am trying to treat him better. My goal is to bake at least 20 things with him in 2025. Here's 1/20: sourdough sandwich loaf. 🍞

I finally succumbed and subscribed to NYT Cooking so I could make Eric Kim's Cookie Week recipe: lemon and turmeric crinkles. I'm always a sucker for a not-too-sweet baking treat.

Honestly, most of my baking learning could be boiled down to 'be patient, [X] takes more time than you think.'
Anyway my latest attempt at choux pastry. I think I could have whipped it longer + let it bake a little longer.

It did not rise enough. It is almost certainly still edible, but I'll have to see when it cools. I knew I should have kept kneading until it passed the window pane test, and this is what I get for laziness. #MyBakingLearning

I realised Pi Day is this week, so I gotta do better than my previous pie failure. Got the timing and evenness of the dough correct, and I did a better job making sure the dough didn't get too warm! My crimping still leaves a lot to be desired, but it's a clear improvement. #mybakinglearning

I have had many pie crust failures, and today my failure is a handpie. My crust is too thick, and I always underestimate how long it takes to bake. The obscene spillage from an unsealed corner is the least of my problems. #mybakinglearning

Sometimes you dream about a sandwich and you just have to make it. Chicken parmigiana with kimchi on fresh bread.

This is my third baguette + my first time using Practical Kitchen's mini baguette recipe - will definitely be using this recipe again. #mybakinglearning 🍽️

Bluesky, I'm using you exclusively to document #mybakinglearning. Second attempt at gougeres. Not great height, but it did produce a decent pocket for filling.

The real victory is that my guests devoured almost all of them before I could take a decent photo. 🍽️
