Take spines, necks (your store sells extras!), throw on some bbq rub, and roast over a real fire if you can or pellet smoker at max temp. Get some real wood flavor on there. Also some veggies.
Into a pot with lots of garlic, more herbs, peppercorns, bay leaves and lots of water

Turkey process: Day 1.
Removed spines from 2 turkeys.
Make a brine, 2:1 salt to brown sugar, herbs, peppercorns, oranges, garlic. Add ice to cool once solids absorbed.
Once cool, turkeys into bags with brine, get out all the air. Place in cooler with lots of ice.
