Turkey process: Day 1.
Removed spines from 2 turkeys.
Make a brine, 2:1 salt to brown sugar, herbs, peppercorns, oranges, garlic. Add ice to cool once solids absorbed.
Once cool, turkeys into bags with brine, get out all the air. Place in cooler with lots of ice.

So yall know what I’m about, I’m going to post my full turkey prep and cook here over the next few days. Yes it takes 3 days. Prepare to be annoyed by thoroughness.

Psa, if you are going to brine your turkey, you need to start defrosting it roughly right now.
