So I started malicious compliance.
From now on, I will not entertain any emails/any form of communications outside of my working hours.
I will also stop all tasks abruptly once the clock hits my off time.

It can be demoralizing to feel undervalued and underpaid, especially when your responsibilities and contributions are significant. Unfortunately, some companies do use titles like "Junior" to justify lower salaries, even when the work performed doesn't reflect that level of experience.
