Specifically, concerns around fair use of the training data, and the environmental costs of the electricity use for data centers to run the things.

Can non-Episcopalians chime in? If so, my Lutheran sensibilities resonate most with Prayer B. I'd swap the Words of Institution for the ones I know by heart, but if my ELW Prayer I isn't an option, I could quite happily use TEC Prayer B for the rest of my time celebrating Holy Communion.
