I have never understood that people need a few days to prep for the Thanksgiving meal. I have had as many as 25 people visit for TDay but at most spent maybe 10 hours off and on actually cooking.

I am an experienced cook so perhaps that's it. I suppose if everything is made from scratch then yes.

I wanted a computer back in the '70's. We were dirt poor but my dad was smart. He promised me a computer. He came home with a box one day from Radio Shack.

I roast my turkey breast down for the first half of the cooking process then turn it up to brown the breast and skin the second half.
Why? I want all that fat from the back and thighs to go down to the breast where it's dry. The browning the second half seals the juice in. I have NEVER dry turkey.
