My toxic bartending trait (one of many) is that I have conditioned myself so stringely to rotate stock that I now stock rotate items completely unnecessarily.

Paper straws? Newest to the back.
PDQ rolls? Newest to the back.
Blue rolls? Oh, you better believe newest to the back.

My life is such, that hand on heart, the biggest news I have is that I've changed my usual cob order at The Alex in Derby from cheese and onion to cheese and pickle.

I don't know who needs to hear this, but if you're not selling enough cask beer, then take lines off! It's better to pace through a small selection in great condition than to try and soldier on with a load of beers that have seen better days.
