Welp, made some sourdough. The internet is full of overly complicated advice about this bread. If your loaf floofs up and actually rises, you are fine and did it right.

How was your Sunday? Oh mine was a few hours wasted trying to dig up discarded concrete, nearly planting poisonous monkshood in my garden, pondering who left muddy footprints throughout the house, and making this bread with rosemary I’m growing on the deck.

So… almost perfect.
