Made rye sourdough for the first time. The darker one I used Guinness. The lighter was water? Looking for help…any sourdough bakers out there???

This is called hops bread. A Trinidadian 🇹🇹 classic. I’m working on getting the fluffy aspect of it better. It’s a bread that has very little yeast if any and no butter/oil etc. anyone has any ideas?

Not perfect. It’s my 1st attempt at sourdough baguettes. Looking for help. Are sourdough baguettes high hydration or same as batards etc? Why’d they come out so heavy & lack of air pockets? did a 63/65% hydration with 24g starter, I stretched & fold once and then into fridge for 18 hours per recipe

These are the cross sections of the sourdoughs. Not bad. And the differing methods were interesting to try. And I’ll keep them in my arsenal. Suggestions welcome.

Dough became over proofed, I still baked it using 3 diff methods.
1) roasting pan
2) open bake
3) loaf pan

Made mini sourdoughs today. Have some more cold fermenting right now. Just hope they’re not over proofed cause I had to leave em for longer 😞🙏🏽😞🙏🏽

Can a sourdough baker tell me why? Gummy, doughy. I cut back & added on to bf. Flour 14%protein. Hot temps cause I live in the Caribbean 83+. HELP!!
