My best guess is a GPU emulation/translation issue in the Switch 1 backwards compatibility layer, since Splatoon games have had past issues with ink detection in unofficial emulators due to inaccuracies in their GPU emulation.

It seems like there is a bug on the Switch 2 where you can do a Squid Roll on any surface, regardless if it is inked in your colour.
