The correct follow-up to 2-&-1/2 days of continuous smoking of large pieces of meat is to have a lunch with the in-laws, then load up the neighbours on both sides with plates of brisket, pork shoulder & miso butterscotch burnt ends to apologise for them being downwind of a lot of smoke all weekend.

Used my work-from-home lunch break to eat leftover pizza and play the box of records that was just delivered from imusic.de and dance around the living room and I am telling you, that was a great idea. Top marks, me.

Turns out you can save dry brisket by baking it in an oven with beef stock and red wine for three hours.
