Proof that ham is not a Thanksgiving food: my dog Gravy’s litter was named after Thanksgiving foods because that’s when the shelter found them. His brothers: Turkey, Rolls, Mashed Potatoes, Green Beans. and Stuffing. No Ham anywhere in that list.

I went out to go stir the chili and was confronted with this as I returned to the house. Gravy had to be inside because he had just spent half an hour announcing himself to the neighbors.

One photo of the vegetation in the beef and bacon fats, one with the tomatoes added. The beans are in the second one; the most important thing is that they’re covered in liquid. Then I added the fish sauce and the wine. The spices went in at the vegetation stage and turned the fats into a slurry.

The bacon is rendered a bit and now off, the beef is on and browning. I have a home dry ager and when you dry age steaks, there’s a hard dry shell that forms on the outside. I save that for dog beef (I roast it for the dogs) and for chili. This is NY loin.

Got a late start on the chili. Fortunately my wife is out of town so it’s just me who has to care about timing. Yes, those are carrots with the onion; I said fuck it, surprise vegetables! Red bowl is bacon, blue is beef, and the peppers are in front. I’m chopping them before the grinder.
