Thanks to everyone who recommended using Gitea instead. It worked like a charm and is perfect for my use case. (Just want a local Git server I can back up remotely for personal stuff.)
Bummed out to discover that my Synology NAS just can't handle running a GitLab container. Just grinds everything to a halt.
