To an extent, yes. Commercial varieties are bred for durability and high yield. Granted if a grower finds a unique/tasty variety, they can negotiate exclusivity w/ the seed vendor. (Basically a lot of those little cherry/grape tomatoes in different colours that are like $6-7 a clamshell at loblaws)

Crash course in tomato science:
Fruit can put their effort either into making good roots, or making a tasty fruit. Rarely both.

I guess my point was that grafting to manipulate traits isn't new/ novel & only 2 companies (one of which is Bayer/Monsanto) make most of the greenhouse veg rootstock.
