I made this last weekend. It’s a riff on the omelette from The Bear. Boursin cheese on a toasted bagel with crumbled sour cream and onion chips and a runny egg. Try it!

Two days, and a bit of work, but it was the perfect winter dinner. Beef burgundy, and some old vine Zin from Turley.
