Chicken burgers last night. Had intended to grill them along with the potatoes and peppers but it looked like rain. I liked them, there are a LOT of flavors going on in the patties (lemon juice, Italian seasoning, mustard, smoked paprika). I think perhaps the recipe could use some edits.

Made this pasta over the weekend with leftover chicken bratwurst and grilled peppers. Tossed in a big tomato from dad’s garden. The sauce was sort of a Cajun Alfredo. I was not mad about eating it 4 times this week.

Anyways, these satay grilled chicken thighs (NYT recipe) were good! Not too spicy. I was happy to have another use for the fish sauce I bought a while back.

A really nice stop at Obscurity in Elburn. The bbq smells delicious (and tastes good too, as I remember from a previous visit). The staff is friendly, the beer is tasty. They have pinball machines and I’ve heard Relient K and Something Corporate over the speakers. I’ll be back!

Salmon in Potato Case from Jacques Pepin. Mine were certainly not as pretty as the ones in the cookbook but it tasted good!

Chicken galbi Noodle salad from the NYT with variations. It was ok, a nice light dinner. I do wish it was a little saucier.

Another new recipe for a different Memorial Day bbq - Pão de Queijo. These were really good. If I made them again I may use a stronger cheese, like a Gruyère.

Vegan banana bread (NYT recipe). Trying to clean some stuff out of the freezer and had a handful of bananas in there. This is a solid, very easy to make banana bread. I’m not sure the nuts on top add much, but it could also be that I’d didn’t chop them enough.

Another low-FODMAP recipe (though he seems to be doing better!). One pot lemon chicken and rice. Picture taken as leftovers because we were short on time last night. It was good- definitely took longer than the recipe said it would, but i think that’s often the case with one-pot meals.

I make sloppy joes a lot, but this is low-FODMAP sloppy joes, as my partner is currently on an elimination diet. We both liked it, and I thought it didn’t taste too different from what I usually make. Served without a bun because Health.

Made NYT Taverna Salad as a side for Easter. It was good! A Greek salad with a little more going on. Probably won’t end up eating any more though because a few hours after I ate this bowl, I came down with a stomach bug 🤢 Feeling better today, thankfully.
